The Evolution Food Company kitchen is run from Café Gabbiano, and our menu is prepared by the talented team of chefs who expertly create each delicious packaged meal according to the nutrition guidelines outlined by our head nutritionist Tanya Poppa.


The head chef at Café Gabbiano is the chef preparing packaged meals that are whole-food, local, and hormone-free. Saving you from the hassle of shopping and prep! All you have to do is pick up a delicious, perfectly balanced, nutritious meals and take it home to enjoy! PAOLO DI COSTANZO comes from Ischia, an island off the coast of Naples, Italy. You can be confident you’re eating only the freshest ingredients, and each of Chef Costanzo’s dishes will burst with flavor inspired by seasonal treasures. Think of Evolution Food Company as the packaged food program for foodies. Our culinary team has created a delicious, unique, broad menu for you to enjoy.

In addition to a certified nutritionist and an award-winning chef, we source our foods locally when possible and choose hormone and antibiotic-free protein always.
